Reason to try:

  • World Brewers Cup 2025 3rd place Carlos Escobar's Selective Flow Method

Theory or idea behind:

  • Removing the first part of the extraction (bypass) to reduce saltiness and increase sweetness.

Notes:

  • This can be done with any dripper but having a valve makes it easier.

  • This works very well for experimental processed & natural processed coffees where there is a higher salt content.

  • They also wanted to take out the dryness and reduce bitterness from over extraction by cutting the brew at the end.
